SPANISH PORK CHOPS 
5-6 pork chops
Sm. amount of cooking oil
1 1/2 c. uncooked rice
1 lg. onion, sliced
1 lg. can tomatoes, cut into pieces
1 green pepper, slied
Salt and pepper to taste

Brown chops on both sides in oil in large skillet. Place rice evenly over chops. Place onion slices on rice, and top each with pepper rings.

Reduce heat, cover and simmer slowly for 50 minutes, adding water occasionally to keep moist. Do not let it go dry.
