SPANISH POTATOES WITH PORK CHOPS 
4 pork chops
2 tbsp. salad oil
4 green pepper rings
4 slices onion
4 med. potatoes, raw, sliced
1 (8 oz.) can tomato sauce
1 c. water
2 tsp. salt
1/4 tsp. pepper

Trim pork chops. Brown chips in hot oil (400 degrees in electric fry pan). Drain. Add salt and pepper. Add potatoes between chops. Fit onion slice and green pepper ring on top of each chop. Spoon tomato sauce and water mixture over all. Bring to boil, then simmer covered on low heat 50-60 minutes. Serves 4.
