POTATO PUFF CASSEROLE 
1 (8 oz.) softened cream cheese
5 c. hot mashed potatoes
1 egg, beaten
1/2 tsp. salt
Dash of white pepper
Dash of cayenne pepper
1/2 tsp. paprika (for top)
2 tbsp. minced chives

(Use sour cream not milk when mashed, potatoes should be slightly stiff.)

Combine cheese and hot potatoes, mixing until well blended. Add remaining ingredients except paprika. Beat thoroughly and turn into a 1 1/2 quart casserole. Brush top with butter. Bake uncovered 40 minutes at 350 degrees. Serves 6-8.
