HOMEMADE PASTA 
4 c. flour
1/4 tsp. salt
4 eggs
2 tbsp. cold water

Place flour on large pastry board. Make a well in the flour and place eggs, salt, and water into well. Beat egg whites with fork until well blended. Gradually collect flour from well (take in flour from inside first leaving outer wall of flour last). As mixture becomes thicker, use your hands. Depending on size of eggs, you may decrease flour if dough seems too dry, or add a little more flour is dough seems sticky. Once you form a ball of dough, knead until firm and smooth. Shape in long roll and slice 1 inch thick. Dust each slice with flour and pass through macaroni machine.
