LEMON CRACKERS 
1 qt. and 1 c. lard
8 c. sugar
8 lg. eggs
2 tsp. salt
1 oz. powdered ammonia
3 tsp. lemon oil
1 qt. milk Flour to roll

Stir ammonia in 1/4 cup warm water. Allow to stand until softened. Cream lard and sugar until well blended. Add beaten eggs, blend well. Add salt and lemon oil. Add ammonia to milk and mix alternately with flour to first mixture. Mix until mixture is of proper consistency to handle. Roll out on floured board. Cut in squares or circles. Bake at 400 degrees until light brown. Prick cookies with fork before baking. May also sprinkle with sugar before baking.
