APPLE COFFEE CAKE 
2 c. unsifted flour
1 1/2 c. sugar
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
1/2 c. oil
2 eggs, beaten
1/4 c. strong brewed coffee
1 1/2 tsp. vanilla
2 1/2 c. apples, peeled and coarsely chopped
1 c. chopped nuts

Mix dry ingredients in a large mixing bowl. Stir in wet ingredients and blend. Then stir in apples and nuts. Pour into a greased and floured (or use chocolate drink mix instead of flour) 9-inch tube of Bundt pan. Bake at 350 degrees for 60 minutes or until cake tester comes out clean. Cool 10 minutes. Remove; serve warm or cool sprinkled with powdered sugar.
