SOUR CREAM APPLE COFFEE CAKE 
1 c. sugar
1/2 c. butter
2 eggs
1 tsp. vanilla
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 c. salt
1 c. sour cream

Cream sugar, butter, eggs, and vanilla for 10 minutes. Mix together flour, baking powder, baking soda, and salt. Add to first mixture alternately with sour cream.

TOPPING:

1/2 c. sugar
1/2 c. nuts, chopped
2 tsp. cinnamon
1 med. apple

Grease tube pan. Spread half of cake mixture in pan. Top with 1 thinly sliced apple and half the topping mixture. Add remaining cake mixture and top with remaining topping. Bake at 350 degrees for 40-45 minutes or until top springs back.

You might want to reduce the salt a bit in this recipe.
