SAUSAGE RICE CASSEROLE 
1 lb. sausage
3/4 c. uncooked rice
2 c. canned tomatoes
3/4 c. finely chopped onions
1 tsp. salt
1 tsp. chili powder
2 c. hot water
1/2 c. grated cheese

Brown sausage pouring off fat as it accumulates. Remove sausage leaving 1/4 cup fat. Brown rice with fat in skillet. Stir in tomatoes onions, salt, and chili powder, hot water and sausage. Pour into baking dish (at least 2 1/2 quart size). Bake uncovered at 350 degrees for 45 minutes. Stir, then sprinkle cheese on top and bake for additional 10 minutes.
