GREEN PEPPER JELLY 
This is good with crackers or scrambled eggs!

3/4 cup ground fresh bell pepper
1/4 cup ground fresh jalapeno pepper
6 cups sugar
1 1/2 cup white vinegar
1 (6 oz.) bottle liquid pectin
8 to 9 drops green food coloring

Wash and remove seed from peppers. Grind peppers and combine with sugar and vinegar in a large saucepan. Heat to boiling and let boil for 1 minute, stirring to prevent boiling over. Remove from heat. Stir in pectin, mixing well. Let stand 5 minutes.

Skim film from top. Mix in food coloring. Strain to remove pieces of pepper. Pour into hot sterilized jars. Top with sterilized two part lids and tighten. Cool on racks.

This makes six (8 oz.) jars.
