ITALIAN RICE CAKE 
FILLING:

1 1/2 c. raw rice
1/2 tsp. salt
1 tbsp. nutmeg
1 tbsp. cinnamon
1/2 tsp. vanilla
3/4 c. milk
3 eggs
1/2 c. shortening
1 c. sugar

Cook rice according to package directions. Cream shortening, sugar and eggs. Add rice, salt, nutmeg, cinnamon, vanilla and milk.

SHORT CRUST DOUGH:

2/3 c. sugar
1/2 c. shortening
1 egg
1/2 c. milk
1 tbsp. vanilla
1 tsp. baking powder
3 1/2 c. flour
1/2 tsp. salt
