RICE CAKE 
1 lb. sweet rice flour (mochico)
3 1/2 c. sugar
4 c. homogenized milk
7 eggs
1 c. grated coconut (angel flake)
1 tbsp. grated Parmesan cheese
1 tsp. vanilla
1/2 c. melted butter
2 tsp. baking powder

1. Melt butter first.

2. In large mixing bowl pour sweet rice flour, sugar, milk and eggs. Beat together until well blended.

3. Dissolve baking powder in small amount of water and pour to mixture - blend, then add grated cheese, butter, coconut and vanilla - mix all together.

4. Pour in baking pan and bake at 350 degrees for 1 hour.
