EILEEN'S IRISH SODA BREAD | |
4 tbsp. soft butter 1/2 c. sugar 2 eggs 1/2 pt. sour cream 2 c. pre-sifted flour 1/2 box raisins 2 tsp. baking powder 1/4 level tsp. baking soda 1/4 level tsp. salt Mix flour, baking powder, salt and baking soda; set aside. Mix butter and sugar. Add eggs, raisins and sour cream; stir. Stir in dry ingredients. Batter will be stiff. Bake in greased loaf pan at 350°F for about 1 hour or until top is golden brown. Wrap and slice bread the next day. Also freezes well. You may use caraway seeds in place of raisins if you wish. |
