CORNMEAL MUFFINS 
1 c. cornmeal
1 c. flour
4 tsp. baking powder
2 tbsp. sugar
1/2 tsp. salt
1 c. milk
2 eggs, well beaten
5 tbsp. melted shortening

Sift together cornmeal, flour, baking powder, sugar and salt. Add milk to eggs and stir into dry ingredients. Add shortening. Bake at 400 degrees for 25 minutes in greased muffin pans or 8x8 pan.
