RATATOUILLE 
3 tbsp. olive oil
1 lb. green beans (fresh), tipped & cut in half
1 med. onion, sliced
1 clove garlic, minced
1 lg. or 2 sm. zucchini, sliced
1 lg. or 2 sm. yellow summer squash, sliced
1 lg. can Italian tomatoes, undrained
1 c. chicken broth or bouillon dissolved in water
Salt & pepper
Fresh basil
Lemon wedges

Good served hot or chilled with grilled meats.

Heat oil in wok or large skillet. Saute or stir fry beans with onion and garlic. Add zucchini and summer squash and stir fry or lightly brown. Add can of tomatoes with juice. Add broth and spices. Cover and simmer on low heat until vegetables are tender and flavorful (15 to 20 minutes). Serve with fresh basil and lemon wedges. May be served hot or cold.
