RATATOUILLE 
4 links Italian sausage (cooked, cut up and set aside)
4 tbsp. oil
1 lg. onion, sliced
2-3 tomatoes, cubed
1 bay leaf (crushed)
1/4 c. parsley
2 cloves garlic, finely chopped
1 lg. green pepper, cubed
1 med. eggplant, cubed
1 lg. red pepper, cubed
1 tbsp. basil
1/2 tsp. thyme

Stir fry vegetables in the oil (except the tomatoes). Add tomatoes and cook a little longer. Add bay leaf, parsley, basil and thyme. Add sausage. Cook a few minutes longer to allow seasonings to blend. Pour into a casserole dish. Grate some Mozzarella cheese on top of the casserole and bake at 350 degrees 15 minutes.
