TACO-TOPPED BAKED POTATOES | |
For a quick and easy meal, all you need to add is a salad. The taco topping is microwaved in all of the methods. 4 med. baking potatoes TOPPING: 1/2 lb. ground beef 1/4 c. chopped onion 1/2 pkg. (1 1/4 oz. size) taco seasoning mix Water 4 tbsp. sour cream or cheese 1. Prick potatoes several times with a fork. Arrange in a circle in microwave oven. 2. MICROWAVE (high), uncovered, 12 to 15 minutes or until just about tender, turning potatoes over and rearranging once. Let stand. 3. Crumble ground beef into 1 quart glass casserole; add onion. 4. MICROWAVE (high), uncovered, 3 to 3 1/2 minutes or until meat is set, stirring once. Drain. Stir in taco seasoning and half the amount of water specified on taco seasoning package. Cover with casserole lid. 5. MICROWAVE (high) 2 1/2 to 3 minutes or until heated through, stirring once. 6. Make a crosswise slash in each potato; press sides of potato to form an opening. Sprinkle potatoes with salt. Spoon filling into potatoes. Top each with 1 tablespoon sour cream. About 4 servings, 305 calories each. |
