SHERRIED SWEET POTATOES ON THE
HALF SHELL
 
4 lg. sweet potatoes (equal size)
1/2 c. butter
8 tbsp. sherry wine
1 tsp. salt
1/8 tsp. pepper
Cinnamon
Brown sugar
Paprika

Wash and bake sweet potatoes in a hot oven, 450 degrees, about 40 minutes or until soft. Cut each potato in lengthwise sections and hollow out. Mash contents, whip with 1/2 of butter, sherry wine and season with salt and pepper. Heat in potato shells, sprinkle with cinnamon, brown sugar and paprika. Melt remaining butter and sprinkle on top. Put the sweet potatoes back in the oven for another 15 minutes or until brown. Yield: 8 servings.
