STUFFED EGGPLANT 
4 eggplants
3 lb. loose sausage
1 lb. hamburger
4 oz. Mozzarella cheese
1 sm. onion
1 sm. can tomato sauce
Pinch of oregano
Pinch of garlic powder (optional)
Bread crumbs

Slice eggplant in half lengthwise and scoop out the eggplant. Put in blender or mixer until chopped fine. Saute onion and hamburger. Fry sausage well, and drain off fat.

Mix together sausage, hamburger, onion, eggplant, half the tomato sauce, oregano, garlic powder and half the grated cheese. Stuff into the eggplant shells, sprinkle with remaining sauce, bread crumbs and remaining cheese. Bake at 350 degrees for 25 minutes. Serves 8.
