SHAKER POTATO SALAD 
6 med. potatoes, boiled in their jackets
1 med. onion, minced
1/16 tsp. pepper
1 tbsp. parsley
3 hard cooked eggs, quartered
3 slices bacon
1/2 tsp. salt
1 tbsp. sugar
1/2 c. vinegar
2 bunches leaf lettuce

Cool potatoes just enough to handle, remove skins and slice thinly. Pan broil bacon until crisp. Crumble bacon, and return to drippings. Add onion and saute until translucent but not brown. Add salt, pepper, sugar, and vinegar. Toss lightly. Place on a bed of lettuce. Sprinkle with parsley. Garnish with hard cooked eggs.
