SWEET POTATO PIE 
3 lg. sweet potatoes
2 c. sugar
4 eggs
2 tbsp. nutmeg
2 sticks butter
1-1 1/2 cans Carnation evaporated milk
1 tbsp. vanilla

Boil sweet potatoes with skin on until very soft. Peel off skin. Mash sweet potatoes. Add sugar, butter and eggs. Cream mixture and add remaining ingredients; mix well. Cook in pie crust for 40-45 minutes or until pie is firm at 350 degrees. Use 9 inch pie crust and electric mixer. Makes 3-4 pies.
