FRESH APPLE CAKE 
2 c. sugar
1 1/2 c. cooking oil
2 tsp. vanilla
2 well beaten eggs
Juice of 1/2 lemon
1 tsp. salt
3 c. flour
1 1/4 tsp. baking soda
3 c. peeled, chopped fresh apples
1 1/2 c. chopped pecans

Combine sugar, oil, vanilla, eggs, lemon juice and salt in mixing bowl, beat well. Add flour and soda, add to first mixture and beat again. Add apples and pecans; mix well. Bake in greased and floured tube pan 1 1/2 hours at 325 degrees.

TO MAKE FRUITCAKE:

Add to above:

1 (8 oz.) box dates, chopped
1 sm. pkg. candied cherries
1 jar maraschino cherries, drained
1 jar candied fruit
