FRESH APPLE CAKE 
4 c. coarsely diced apples
2 c. sugar
1/2 c. cooking oil
1 c. chopped nuts
2 eggs, well beaten
1 to 3 tsp. vanilla
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1/2 c. dates

Mix apples and sugar thoroughly. Add oil, nuts, eggs, dates and vanilla. Mix flour, soda, cinnamon and salt; add to batter. Pour into greased 9x13x2 pan. Bake at 350 degrees for 1 hour or until cake shrinks from edges of pan. Decrease heat to 250 degrees if glass pan is used.

ICING FOR FRESH APPLE CAKE:

1 stick butter
1 c. sugar
3 egg yolks
1 to 2 tbsp. flour
1 c. chopped pecans
1 c. coconut

Mix first 4 ingredients together. Cook over medium heat, stirring often until thick. Remove from heat. Stir in pecans and coconut.
