TACO SOUP 
1 lb. beef stew meat, cut in 1/2" cubes or 1 lb. lean ground beef meat balls
1 onion, chopped
1 clove garlic, minced
1/2 green pepper, chopped
1/2 red pepper, chopped
1 packet taco seasoning mix
1 can corn
1 can Ro-tel tomatoes
1 can garbanzo or pinto beans
2-3 beef bouillon cubes

Saute first 5 ingredients in large soup pot (4 quart). Fill pot with water 2/3 full. Add remainder of ingredients. Simmer on low heat for 2 to 3 hours.

Serve in bowls with crushed crisp tortilla strips. Sprinkle with sharp cheddar cheese.
