GOURMET GOLDEN SQUASH 
6 c. squash (raw)
2 tbsp. butter
1 c. sour cream
1/2 c. finely chopped onion
1 tsp. salt
1/2 tsp. pepper

Cook squash until tender, approximately 10-15 minutes. Drain. Heat oven to 400 degrees. Mash squash and stir in remaining ingredients. Pour mixture in ungreased 1 quart casserole. Bake uncovered 20 minutes or until heated through. May sprinkle top with grated cheese.
