VEAL PICANTE 
2 tbsp. all purpose flour
1/8 tsp. salt
Pinch of pepper
1/8 tsp. paprika
2 (4 oz.) slices veal
Vegetable cooking spray
1/4 c. water
2 tbsp. vinegar
1 tsp. brown sugar
1 bay leaf
2 thin lemon slices
Additional lemon slices (optional and I prefer them)

Combine first 4 ingredients; stir well. Dredge veal in flour mixture; pound with a meat mallet until thin. Heat a heavy skillet over medium heat; spray with cooking spray. Add veal; brown on both sides. Combine water, vinegar, and brown sugar; stir well. Pour over veal; add bay leaf. Place a lemon slice on each veal piece. Bring to a boil; reduce heat, and simmer 5 minutes or until done. Discard bay leaf and lemon slices. Garnish with fresh lemon. Goes well with a side dish of carrots, and top off with orange tapioca for dessert.
