TANGY MEAT LOAF | |
MEAT LOAF: 1 (15 oz.) can tomato sauce 1/2 c. light brown sugar 1/4 c. vinegar 1 tsp. prepared mustard 2 lbs. lean ground beef 1/2 lb. ground pork 2 eggs, slightly beaten 1 sm. onion, minced 1/2 c. fine bread crumbs 1 tbsp. salt 1 tsp. pepper In medium bowl mix tomato sauce, brown sugar, vinegar and mustard. In large bowl mix ground beef, pork, eggs, onions, bread crumbs, salt and pepper. Measure out one cup of tomato sauce mixture, reserving remaining sauce and add to meat mixture. Mix until thoroughly combined. Place into 2 quart casserole or loaf pan. Pour 1/4 cup reserve sauce over top. Bake at 350 degrees for 1 hour. 8 servings. QUICK SAUCE FOR MEAT LOAF: Fry onion, green pepper and celery all sliced thin in a little butter. Then heat with can of tomato soup and about 1/2 cup water. |
