ONION PIE 
CRUST:

24 Ritz crackers
2-3 tbsp. butter
1/2 tsp. pepper

Make crust and place in a buttered pie plate (9-inch). Grind fresh pepper over Ritz cracker crust.

FILLING:

4-5 onions
1/2 lb. Swiss cheese
1 c. milk
2 beaten eggs
1 tsp. salt

Slice the onions thin and fry in an additional 2-3 tablespoons butter. Soften onions but do not brown. Add a little water. Cook with cover for 3/4 hour, checking to make sure they are not browning. Drain, if necessary, and place in crust. Cover with grated Swiss cheese.

Scald 1 cup milk and add slowly to beaten eggs. Add salt and pepper. Pour over pie. Sprinkle with paprika.

Bake at 375°F for 40 minutes. Test with knife.

Can be made up to this point in advance.
