CRANBERRY ORANGE SALAD 
2 oranges, peeled and sliced
1 (12 oz.) pkg. fresh cranberries
1/4 c. orange juice
1/4 c. water
1/2 to 1 tsp. cinnamon
3/4 to 1 c. sugar
Dash of nutmeg

Cook washed and sorted cranberries in orange juice and water. Add cinnamon, sugar and nutmeg. Continue to cook until berries have burst and are soft. Mixture will have a thick sauce like consistency. Chill. Peel and slice oranges. Place orange slices on a lettuce leaf and top with the homemade cranberry sauce.
