CRANBERRY PUMPKIN BREAD | |
2 c. sugar 1/2 c. oil 1/2 c. egg substitute 1 c. canned pumpkin 2 1/4 c. all-purpose flour 1 tbsp. pumpkin pie spice 1 tsp. baking soda 1/2 tsp. salt 1 c. chopped cranberries Mix sugar, oil, egg substitute and pumpkin together. In a large bowl, combine flour, pumpkin spice, baking soda and salt. Make a well in the dry ingredients and pour in pumpkin mixture. Mix until just moistened. Stir in cranberries. Divide batter among 2 greased and floured loaf pans. Bake at 350°F for 1 hour or until toothpick comes out clean. |
