SPUD NUTS 
1 pkg. yeast
1/2 c. warm water
1 tsp. salt
1/2 c. sugar
2/3 c. shortening
2 c. scalded milk
1 c. mashed potatoes
2 beaten eggs
6 to 7 c. flour

Put yeast into water. Add salt, sugar and shortening to scalded milk and cool. Add mashed potatoes, egg, yeast and flour. On lightly floured board roll dough out and cut 1/2 inch spud nuts. Let dough rise for 1 hour. Fry in deep fat 350 degrees. Glaze with 2 cups powdered sugar, 1 teaspoon vanilla and a little warm water.
