FRESH COCONUT CAKE 
2 1/2 c. self rising flour
2 c. sugar
4 eggs
1/2 c. shortening
1 tsp. vanilla
Coconut meat from 1 fresh coconut, grated or 2 c. coconut (bagged)
1 can Eagle brand condensed milk

Mix first 5 ingredients until smooth. Bake in 325 degree oven for 30 minutes (9"x13" pan). Remove from oven. Poke holes in top of warm cake. Pour 1/2 condensed milk over top of cake. Mix coconut and remaining milk. Pour over cake. Frost with 7-Minute Frosting and sprinkle with coconut.
