EXPRESS MEAT LOAF WITH MUSHROOM
STUFFING
 
2 (3 oz.) cans mushrooms (drain and save broth)
1/2 c. minced onions
4 c. soft bread crumbs
1/4 c. minced parsley
2 eggs, beaten
1/8 tsp. pepper
1/3 c. mushroom broth
1/4 c. butter
1/4 tsp. thyme
2 1/2 lbs. hamburger
1 1/2 tsp. salt
1/3 c. catsup

Drain mushrooms; save broth. Saute mushrooms and onions in butter until onions are transparent. Combine bread crumbs, thyme, parsley. Lightly mix together hamburger, eggs, salt, pepper, catsup and broth. Pack 1/2 of the meat mixture into 9x5x3-inch loaf pan. Pack stuffing on top, then the remainder of the meat. Bake at 375 degrees for 1 hour and 15 minutes.
