Peel and quarter apples. Place in saucepan. Add 1 cup sugar, 1 cup water with a few drops of red food coloring. Slice 1 or 2 lemons over top. Cook over medium temperature until apples are transparent and tender. Watch carefully and remove each piece of apple when transparent. Place on container so they will drain well. Add 1 more cup of sugar to juice and cook until it jellies. Drain juice from apples. Arrange apples in bowl and pour jellied juice over them with lemon slices on top.
