APPLE JELLY A LA MICROWAVE 
3 1/2 lbs. apples, washed, cored & cut in eighths
3 1/2 c. water
3 c. sugar or 3/4 sugar for each 1 c. juice
2 tbsp. lemon juice

Place apples and water in a 4 quart casserole. Cook in microwave covered, full power, 20 minutes or until apples are tender. Strain apples and liquid through cheesecloth. (There should be 4 cups of juice.) Add sugar and lemon juice. Cook full power, 35 minutes or until jellying point is reached. Pour into hot sterilized jars. Cool. Refrigerate.

Since microwave ovens vary in power, you may need to adjust your cooking time.
