SPINACH CASSEROLE 
2 pkg. frozen spinach, thawed and squeezed
1 can cream of mushroom soup
1 onion, chopped
1 can water chestnuts, slivered
1 c. grated Cheddar cheese
1/2 c. milk
3 boiled eggs, chopped
Cracker crumbs

Saute onion in butter. Combine all ingredients EXCEPT cracker crumbs. Mix very well. Pour into lightly greased casserole dish. Top with cracker crumbs and dot with butter. Bake uncovered 30 to 40 minutes at 350 degrees.
