TONKATSU | |
2 lbs. lean pork, cut into 1/4" thick slices, makes about 24 pieces 1 tsp. garlic powder 1/4 tsp. salt 1/4 tsp. black pepper 3 c. bread crumbs 1 c. all purpose flour 2 eggs 1 c. crushed ice 5 c. vegetable oil Beat eggs for 2 minutes. Drop in crushed ice; do not stir eggs after mixing. Set aside. Season pork cutlets with garlic powder, pepper and salt. Let stand for 5 minutes. Coat seasoned meat with flour. Dip meat into beaten eggs, then coat with bread crumbs. Flatten meat using both hands. Pour vegetable oil for frying at least 2" deep into frying pan. Heat to 325 degrees. Fry pork cutlets, turning occasionally, until light golden brown. Drain on paper towel. Cut into bite slices. Tonkatsu Dipping Sauce: Combine 1 cup ketchup, 1/2 cup soy sauce and 1 tablespoon sugar. Serve in small individual bowls. Good for 8 to 10 servings. |
