DIETERS' DREAM COCONUT CREAM PIE 
CRUST:

8 (2 1/2") square graham crackers
2 tbsp. + 2 tsp. reduced calorie butter, melted

Crush graham crackers and mix well with the melted butter. Press into 8" pie pan sprayed with release agent. Bake at 400 degrees for 3 minutes.

FILLING:

1 env. vanilla low calorie pudding
2 c. skim milk
2 lg. eggs, separated
4 tsp. cornstarch
1 tsp. vanilla
1 tsp. Sweet & Low or artificial sweetener to equal 1/4 c. sugar

Mix 1 3/4 cup milk into pudding mix. Add cornstarch and bring to a boil, stirring constantly. Add 1/3 cup milk and egg yolk which has been beaten together. Stir until mixture becomes thick. Remove from heat. Add vanilla and sweetener. Pour into crust.

TOPPING: Beat 2 egg whites with 1/4 teaspoon cream of tartar until foamy. Gradually add 2 teaspoons sugar and spread evenly over pie. Sprinkle 4 teaspoons coconut evenly over top.

Brown in 400 degree oven for 10 minutes.
