BANANA BREAD 
3 1/2 cups flour
2 1/2 cups sugar
2 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
2 1/2 tsp. cinnamon
1 cup vegetable oil
2 cups mashed bananas (about 5 bananas)
4 eggs
1 tsp. vanilla
1 1/2 cups pecans (optional)

Stir together eggs, oil, bananas and sugar. Stir in dry ingredients that have been sifted together.

Grease and flour four 1 lb. coffee cans and fill each almost 1/2 full with batter.

Bake at 350°F for 50-60 minutes or until toothpick inserted in center comes out clean. Wrap loaves while still luke warm and they will be very moist.

Slice and enjoy plain, with butter or cream cheese spread.
