BEST BANANA BREAD 
1/2 c. butter, softened
1 c. granulated sugar
2 eggs, slightly beaten
1 c. mashed, ripe bananas (about 3 lg.)
1 1/2 tbsp. sweet milk
1 tsp. lemon juice
2 c. sifted flour
1 1/2 tsp. baking powder
1/4 tsp. salt
1/2 tsp. baking soda
1 c. chopped pecans, or walnuts

1. Cream the softened butter, or butter, with the sugar until well blended; add eggs one at a time. Mix the lemon juice into the milk; add to the mashed bananas. Add bananas to the creamed sugar mixture.

2. In a medium bowl sift the flour, baking powder, salt, and soda. Stir in the pecans, or walnuts. Slowly add flour mixture to the creamed sugar mixture; stir only enough to blend.

3. Pour mixture into a greased 8 1/2 x 4 1/2 inch pan. Bake in a 350 degree oven for 45 minutes, or until toothpick inserted in center comes out clean. Cool on a wire rack. May be wrapped and frozen for later use.
