CRISPY SWEET PICKLES | |
3 gal. sliced cucumbers 1 gal distilled vinegar 10 lb. granulated sugar 1 1/2 tbsp. pickling spice 2 tbsp. salt Pickling lime Wash and slice cucumbers 1/4 inch thick. Cover with solution of 1 1/2 cups lime to gallon of cold water. Soak 24 hours, stirring occasionally. Remove; wash thoroughly until water is clear. Let stand in clear water 12 hours - changing water every 4 hours; drain. Mix vinegar, sugar, spice and salt and bring to a boil. Add cucumbers and bring back to boil for 1 hour. Stir occasionally. Place in jars and seal. |
