TZIMMES 
4-5 lb. beef brisket, trimmed
4 carrots, sliced into 1" chunks
3 med. onions, sliced
6 oz. dried apricots
12 oz. pitted prunes
3/4 c. brown sugar
1 c. water

Place meat in roasting pan. Place carrots, onions and fruit over meat. Sprinkle with brown sugar. Add water to 1/2" in pan. Cover and bake at 325 degrees for 3 hours. When mixture is cooled, skim off fat. Slice meat; place in pan. Spread fruit mixture over meat. May be refrigerated and reheated. (Serve with potato kugel and green salad.) Makes 12 servings.
