SPECIAL APPLE PIE
1 c. Grape-Nuts
3 tbsp. apple juice concentrate
4-5 apples (preferably Granny Smith)
2 tbsp. lemon juice
3 tbsp. raisins
Cinnamon
Nutmeg
1/2 c. apple juice concentrate
1/2 c. water
1 tbsp. cornstarch

Combine Grape-Nuts and 3 tablespoons apple juice concentrate. Mix until juice is absorbed by cereal and press into bottom and sides of a 9-inch pie plate. Sprinkle with cinnamon, approximately 1/4 teaspoon and set aside.

Pare apples and slice thinly. Sprinkle with lemon juice and add raisins. Pile fruit into crust and sprinkle with cinnamon and a touch of nutmeg. Cover with foil paper and bake in a 350 degree oven until apples are tender, about 45-50 minutes. Remove from oven and prepare glaze.

Combine 1/2 cup apple juice concentrate, water and cornstarch in a small saucepan. Cook over medium heat, stirring constantly until thickened and smooth. Spoon hot glaze over hot pie. Set aside to cool, then refrigerate.
