HEALTHY CHOICE SQUASH 
1 red onion, chopped
1 tbsp. extra virgin olive oil (EVOO)
1 tsp. butter
1 butternut squash, peeled, seeded and cut into bite-sized cubes
1 (15 oz.) can stewed tomatoes (Hunts)
1 tsp. sugar
salt and pepper, to taste

Sauté onions in oil and butter till onions are tender, add all the rest of the ingredients. Simmer on low heat covered till squash is tender. Enjoy!!!
