RUEBEN CASSEROLE 
5 c. herb seasoned croutons
1 c. hot water
1 (8 oz.) pkg. Swiss cheese, sliced (set aside 2 slices)
6-9 slices canned corn beef
1/2 c. melted butter
2 c. sauerkraut, drained
1 tsp. caraway seeds (optional)

Preheat oven to 350 degrees. In a large bowl, put in croutons and butter; toss gently. Add hot water, sauerkraut, and caraway seeds. Set aside 1 cup of mixture. Grease casserole dish. Layer crouton mixture, corn beef, and cheese slices. End up with the 1 cup of crouton mixture. Cover and bake in a 350 degree oven for 20 minutes. Top with the 2 cheese slices and bake uncovered 10 minutes until cheese melts.
