CREOLE SHRIMP 
3 tbsp. shortening
1 medium onion, sliced
1 medium green pepper, chopped
1 (8 oz.) can tomato sauce
1/2 bay leaf, cayenne pepper to taste
About 7 oz. uncooked, cleaned shrimp (frozen or fresh)
1/2 tsp. salt
1/8 tsp. pepper (black)
2 1/2 c. cooked rice

Melt shortening in 2 quart saucepan. Add onion and green pepper. Cook slowly stirring constantly until tender. Add tomato sauce, bay leaf, shrimp, salt, and black pepper. Simmer for 15 minutes. Add cooked rice and cayenne to taste. Serve very hot; garnish with green pepper rings.
