BRITTNEY'S MEXICAN LASAGNA 
I adapted this recipe to match what I had in my kitchen.

1/2 cup chopped onion
1 lb. ground beef
seasonings to taste: cumin, red pepper flakes, salt and pepper, chili powder
1/2 to 2/3 cup salsa (to mix with beef)
1/4 cup salsa (for base of pan)
1 (15 oz.) can refried beans
grated cheese (I use Monterey Pepper Jack)
tortillas

Preheat oven to 350°F.

Sauté onions, then add ground beef. Cook until browned.

Add spices, to taste. Mix in 1/2 to 2/3 cup salsa, depending on how moist you like it.

In round baking pan, spread 1/4 cup salsa. Place a tortilla on top.

Layer: refried beans, ground beef mix, cheese and tortilla. I usually do two layers with a tortilla on the top.

Cover pan with foil and bake at 350°F for 30 minutes.

This recipe makes great leftovers. I omitted sour cream, but you could add it in the layers if you like.
