EASY RICE CASSEROLE 
1 stick butter
1 c. rice
1 can beef consomme
1 can water
1 sm. can mushrooms
1 sm. chopped bell pepper
1 sm. onion, chopped

Saute onions, bell pepper, mushrooms in 1 stick butter. Mix rice, soup, water, season with salt and pepper. Add to sauteed mixture. Bake about an hour at 350 degrees in a glass casserole. While cooking, stir occasionally.
