GREEN VELVET CAKE 
1/2 c. shortening
1 1/2 c. sugar
3 eggs
2 oz. green food coloring
2 tbsp. cocoa
1 tsp. salt
1 c. buttermilk
2 1/4 c. flour
1 tsp. vanilla
1 tsp. baking soda
1 tsp. vinegar

Cream shortening and sugar, add eggs and blend. Add food coloring and cocoa. Blend in buttermilk. Add flour and salt gradually. Mix vinegar and soda. Add to mixture last and stir. DO NOT BEAT. Bake at 350 degrees for 30 to 35 minutes.

ICING:

1 c. milk
1/4 c. flour
1/2 c. shortening
2 c. confectioners' sugar
1/2 c. butter
1 tsp. vanilla

Beat milk and flour until thick and place in refrigerator until cold. Beat shortening, sugar and butter on high speed of mixer until fluffy. Add milk and flour mixture and vanilla and continue beating until fluffy. Do not underbeat.
