CRUSTY MUSTARD CHICKEN 
1 stick unsalted butter
2 tbsp. vegetable oil
6 tbsp. Dijon mustard
3 tbsp. minced shallots
Sprinkle of thyme
1 tsp. black pepper
1/2 tsp. crushed red pepper
2 - 2 1/2 lbs. cut up chicken
4 c. bread crumbs

Melt butter in the oil over low heat; set aside. Combine mustard, shallots, thyme and peppers. Stir in half the butter mixture. Brush chicken with mustard mixture and roll in bread crumbs. Dab with butter mixture. Bake at 350 degrees for 1 hour.
