SAUSAGE AND SQUASH CASSEROLE | |
1 lb. sausage 1 clove garlic, crushed 4 c. sliced summer squash 1/2 c. dry bread crumbs 1/2 c. grated Parmesan cheese 1/2 c. milk 1 tbsp. snipped parsley 1/2 tsp. salt 1/2 tsp. dried oregano, crushed 2 eggs, beaten Cook sausage and garlic until meat is brown. Drain off excess fat. Cover and cook squash in small amount of water until tender; drain. Combine squash, cheese, milk, parsley, salt, and oregano with meat. Fold in eggs. Place in baking dish and bake at 325 degrees for 20-25 minutes. |
